One day at a time

We choose the spot together: an olive grove, the edge of a vineyard, the meadow behind a country church. You arrive as the light begins to soften, and the basket holds whatever the season is giving — bread, pecorino, cured meats, vegetables in oil, a bottle opened right there.

There is no finishing time. It is the simplest way I know to show someone why people come to Tuscany.

You come in through the service gate, the one the coaches never see. You walk the rows with the person who prunes them, go down to where the barrels rest, and taste from the barrel before you taste from the bottle.

The tasting is technical but never solemn: you talk about vintages, soil, decisions. And it almost always ends at the table, with bread and new oil.

You go at a walk, unhurried, and you don't need to know how to ride: the horses are calm and someone is always beside you. You cross woods, ridges and white gravel roads you would never see from a car.

From the back of a horse Tuscany has different proportions, and the silence is a different silence.

The dog goes first, the hunter follows, and you follow both. When the dog stops and starts digging, you dig with him: the truffle comes out of the ground and they put it in your hand still covered in earth.

You come back with what you found and eat it there, on something simple, because a truffle needs nothing else.

You enter the workshop quietly, because the wheel demands attention. The master puts your hands on the clay and guides them: the first attempt comes out crooked, the second a little less.

What you make stays behind to be fired and reaches you at home. It is the one Tuscan souvenir nobody else has.

Not a cooking school: someone's home kitchen, with a worn marble table and a wooden board for the pasta. You knead by hand, roll the sheet with a mattarello, and learn to feel with your fingers when it is ready.

At the end you sit down and eat what you made, with the house wine.

You walk slowly with someone who knows those fields plant by plant: the broom, the poppies, the lavender, the herbs that end up in the kitchen and the ones that end up in a bunch.

You gather, you learn to arrange, and you go home with something alive instead of a photograph.

You put on the suit and approach the hives with the beekeeper, who opens them, shows you and explains without hurrying. Inside there is an order that surprises everyone, including the people who thought they weren't interested.

It ends by tasting the year's honeys one after another: they change with the flowers, and you can taste it.

You start early, while the grapes are still cold. You cut, you fill the crate, you carry it to the cellar — and you see what happens to the bunch in the hours that follow.

Then everyone eats together, the way it has always been done at harvest: the part nobody expects and everybody remembers.

On the table are the base wines, each from a different grape. You taste them one by one, understand what each brings, and then start measuring: a little more of this, less of that.

When the blend convinces you, you bottle it, cork it and write the label. That bottle exists in a single copy.

In the harvest months the mill runs day and night. You go in while the olives are still arriving from the fields and follow the whole passage, down to the moment the oil comes out green and dense.

You taste it exactly as it is, on a slice of bread just off the fire. Anyone doing it for the first time realises they had never really tasted olive oil before.

It starts with the scent — lavender, fig, resin, beeswax — chosen by smelling, not by reading. Then you work the warm wax, pour the moulds, and press in dried flowers picked from the fields nearby.

While the candle cools you sit and talk. When it is ready you take it with you: the one thing that will bring you back here every time you light it.
